“What’s for breakfast?”
I can’t tell you how much I hate that question. During the school year, the kids are usually on their own for breakfast. During the summer, however, they’ve got plenty of time to whine and complain about not having food to eat.
I am not a big breakfast person. In fact, I’m not really a morning person. I’m pretty grumpy until I get my first cup of coffee.
I might wake up early, but the last thing I want to do is make a big breakfast for everyone. I’ll do lunch… I’ll do dinner… but I really don’t like making breakfast. Something about having to work so hard at something so early in the day makes me cranky. The problem with all this is that my husband IS a huge breakfast person. He could eat breakfast food for lunch and dinner every day. He NEVER goes to work without a full breakfast and lately he’s been having to make it himself because, well… I hate making breakfast.
So you get that breakfast really isn’t my thing, right? Still… the rest of the family needs to eat it and I hate the thought of them just grabbing something unhealthy or that doesn’t really fill them up enough. Since I was over at Walmart scrounging around for school supplies (yes, now is the time to get everything at bargain basement prices), I thought I’d go out of our usual box and try some new breakfast things.
We’re big egg eaters so anything that has eggs in it is usually a safe bet for the entire family. I ended up picking up some STOUFFER’S® Morning Classics (Sausage and Egg Scramble) along with some NESCAFÉ® TASTER’S CHOICE® Instant Coffee House Blend coffee packets and of course, my favorite NESTLÉ® COFFEE-MATE® Liquid Coffee Creamer. Thought I’d try the Classic Vanilla and the Caramel Macchiato this week.
Okay… so I might have added in some whipped cream and caramel sauce too. I can’t go a day without my coffee… if you know me at all, you know that is a fact! The problem is that it’s been so ridiculously hot out in the mornings already that I want my coffee… but I want something cold to drink too. I thought that I’d maybe start whipping up some coffee smoothies instead of having to deal with the hot drinks every morning. My kids are big coffee lovers too, so when I make this for them, I’ll just use decaf instead.
Coffee Smoothie
Ingredients:
1 packet of Nescafe Taster’s Choice Instant Coffee - House Blend
1 cup of Nestle Coffee-Mate Liquid Coffee Creamer - Caramel Macchiato
1 cup ice cubes (larger cubes work better than the ice chips - found that out the hard way).
splash of caramel sauce
Directions
Dissolve one packet of the coffee in 6 oz. boiling water. Go ahead and stick an ice cube or two into the hot coffee to cool it down. You don’t want to put hot coffee in the blender with the ice cubes. The cubes will just melt and you’ll end up with a weird tasting coffee drink… not a rich and creamy smoothie.
Once the coffee is cooled, add it into the blender with the creamer, ice and some caramel sauce, to taste. Blend.
This will make enough for two people and I served it with some whipped cream on top and another dash of the caramel sauce. We made this same recipe with the Classic Vanilla Creamer and added a little vanilla extract to the mix and then drizzled some chocolate sauce on top of the whipped cream. So, so good. You could also add a banana or some peanut butter, or really any flavoring you like. And can I just say it is SO much cheaper than the expensive coffee shops!
Partner the Coffee Smoothie with one of the Stouffer’s Morning Classics and you have a fast, easy and quite delicious restaurant quality breakfast in just minutes. Pretty cool!
I think we might be on to something here.
I’m too busy to worry about breakfast for everyone, so having things on hand that we can prepare any time is a huge convenience for me. Who wants to spend hours every morning cooking and cleaning up dishes?

The Caramel Macchiatto is totally one of my favorite creamers! and EVERYTHING is better with caramel sauce. I’m learning that with my DIY iced coffees at home
