Lunches around here can lean to the boring side. I have to make 3 (sometimes 4) lunches every day, 5 if you count my lunch. I love being able to pick up a great gourmet sandwich, but I don’t always have the time… and the cost can get a little out of control. Also, some of those gourmet sandwiches aren’t exactly healthy for you.
I’ve recently been introduced to Hungry Girl Foldit Flatbread. At only 90 calories these not only make the perfect no-guilt sandwiches, but they are full of fiber and have less carbs than regular sliced bread. They can also be found at Walgreens for when you run out of bread for school sandwiches and it’s 10:00 pm and you don’t want to make a trip to the market. Not that this has ever happened to me… much. Yes, every once in a while I’ll run into my local Walgreens and stock up on groceries along with my make-up and prescriptions.
So, using Hungry Girl Foldit Flatbread, I came up with a few gourmet-at-home sandwiches that I hoped my family would love. I created one cold sandwich and one hot sandwich.
COLD SANDWICH: GOURMET CHICKEN SALAD
I love a good, full of flavor, chunky chicken salad. You know, the kind you get at a fabulous gourmet sandwich shop.
Ingredients:
Cooked chicken (I used a ready-made rotisserie chicken)
Finely diced celery
Mayo or Miracle Whip
Dijon mustard
Dried cranberries
Baby spinach
Beefsteak tomato
Salt & Pepper
I cut up the rotisserie chicken into chunks. You can cut it up as small a you like, but I wanted to be able to really bite into a piece of chicken. Add the mayo (I use Miracle Whip because it has a sweeter flavor), mustard, cranberries and salt & pepper to taste. Mix well.
Layer the baby spinach, slice of tomato and the chicken salad on the Foldit Flatbread. Super fast, easy and delicious.

HOT SANDWICH: EGGPLANT, RED PEPPER & FETA WITH ARTICHOKE MAYO
Ingredients:
Eggplant (sliced thin)
Roasted red peppers
Crumbled feta cheese
Marinated artichokes
Mayo (or Miracle Whip)
Salt to taste
Heat a large skillet with vegetable oil and cook the eggplant slices just until they are soft. Meanwhile, finely chop the artichoke hearts and mix them with the mayo, adding some of the artichoke liquid as well. Add salt to taste.
Spread the artichoke mayo on the bread and layer the eggplant, feta cheese and red peppers.
Take the sandwich and give it some heat. The feta will melt just enough to make the entire sandwich soft and scrumptious. I heated my sandwich in my Hamilton Beach Convection Toaster Oven for just a minute. You can also heat it up in your microwave or a regular oven.
My family was awestruck with how yummy these sandwiches were. It really doesn’t take a lot of fancy ingredients and endless amounts of time to create your own hot or cold gourmet sandwiches at home.
