Peach Puff Pastry Recipe with #DelMonte Diced Peaches with Cinnamon and Brown Sugar #cbias

I love coming up with new recipes. I never thought it would be something fun for me but I kind of enjoy taking a bunch of ingredients and putting them together without having a recipe to follow. I figure after all these years of cooking, I better have picked up some tips and tricks to create my own dishes.

I had a mission this week: try out the new Del Monte Diced Peaches with Cinnamon & Sugar. We go through a lot of fruit in our house for snacks and school lunches, so trying these new diced peaches was something I would have done anyway. The trick is to create a recipe using the Diced Peaches. You can see my Google+ shopping experience HERE and then read on to see my recipe.


Peaches + Cinnamon + Brown Sugar = Cobbler

My first thought was to make a cobbler or peach pie, but as I was shopping for ingredients I came across the fillo dough and decided to try out something new.

PEACH PUFF PASTRY

Ingredients:
Del Monte Diced Peaches with Cinnamon and Brown Sugar
Frozen fillo dough
Butter

I love recipes with easy ingredients that turn out totally fabulous. This is so easy to prepare.

Take several ramekins depending how many individual desserts you want to make.

Next, you want to roll out your fillo dough. Fillo dries out VERY quickly so you can keep a wet paper towel over the fillo sheets to keep it moist. Take an individual sheet and coat it with melted butter.

I tore the fillo sheet in half and then folded each half. Layer the sheets in the ramekin.

Take the cut of Del Monte Diced Peaches with Cinnamon and Brown Sugar and let out some of the juice just so the ramekin doesn’t overflow. Pour the peaches into the center of the fillo dough.

Fold up the edges of the fillo dough and give them a little twist at the top to keep it sealed.

Brush the top with a little more melted butter and place the ramekins on a cookie sheet.

Bake in a 400 degree oven for 15 - 20 minutes or until the tops are golden brown.

Serve warm either alone or with a scoop of ice cream. You can even drizzle a little caramel sauce over it if you like.

My kids just adored these and the best part is that although this isn’t a low-calorie dessert, it is the perfect serving size for a great little treat.
