Is it Banana Bread or Banana Cake? Either Way it’s a Recipe

My mother used to always make banana bread as a kid. While I can’t stand the thought of actually eating a banana, for some reason I love it in a bread… cake… whatever you call it. I’ve been on a banana bread kick this week, made my second one last night because the first one barely lasted a day in my house.

Banana Bread

Ingredients:

2 cups flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1/4 lb. (1/2 cup) butter or margerine
1 1/2 cups sugar
2 eggs
1 cup mashed up banana - I use one large banana, extra ripe
1 cup sour cream
1 tsp vanilla extract

Preheat oven to 350 degrees F. Grease and flour either a loaf pan or a bundt pan. Trust me, if you skip the flour part the banana bread will stick pretty badly. Sift together the flour, salt, baking powder and baking soda. Set aside.

In a mixer, blend the butter and sugar together. Add the eggs and bananas. When well mixed, add the flour mixture and the sour cream. Add the vanilla extract last.

Batter should be smooth and free of lumps. Pour into pan and bake for approximately 50 minutes. Insert a toothpick into the bread to make sure it comes out clean. Cool on a wire rack.
