I’m on this kick to eat healthier and actually cook more during the summer. Since I’ve been working and it’s been so hot here, I really haven’t been in much of a mood to prepare dinner. That certainly isn’t making my family happy. It’s so much easier to just run out and pick up food, but it sure isn’t great for the pocketbook. We’ve been using our grill a lot more and that has actually helped us eat healthier. Hard to eat too terribly bad when you are grilling. Since I had picked up a bunch of ReadyPac Bistro Salads at Costco, I thought I’d use them to make one of our favorites: pizza.
Costco is one of those stores that you kind of get lost in… lost in that good way where you keep finding more and more things you want (but don’t really need) around every corner. There are certain things that I can only get at Costco… one of them being the ReadyPac Bistro Salads. I like that I can get them in 2-packs and 4-packs, because with a big family, we go through a LOT of salad. There are so many varieties to choose from, but my favorites are the Chicken Caesar Salad and the Santa Fe Style Salad. The kids like taking them to school because they are the perfect size, and I also like to use them for our home meals as well.
When I don’t have a lot of time to cook, I try and make a simple main course, usually pasta or chicken, and then we always have a salad. Salad gets boring when you have the same thing every night, so I thought I’d try something a little different and create a salad pizza. It’s easy, it’s fun, and it tastes like you spent a lot of time preparing it. The ReadyPac Bistro Salads take care of the easy part.
Ingredients: ReadyPac Bistro Salads (I used 2 bowls) and pizza crust.
You can make your own pizza crust if you have time and are really good at it. I don’t have the time so I picked up some ready-made pizza dough. It’s easy to prepare and really turns anything into something fantastic.
I rolled out my pizza dough and spread it on a round grill pan I have. My pan has holes in it so the heat gets to the crust. If you want to make your crust on the grill, you will have to put it on some type of pan. Putting crust right on the grill is a recipe for disaster.
Preheat your grill and then turn it to medium. If the grill is too hot, you’ll burn your crust. Don’t ask me how I know that. Put your pan directly on the grill for about 5 – 10 minutes. Keep checking to make sure it doesn’t burn… unless you like more of a burnt crust. Hey… some people do.
When your crust is ready, take off the grill and get ready to top it.
I used two containers of ReadyPac Chicken Caesar Salad. The salads come packaged with the lettuce separate from the cheese and chicken… so everything doesn’t get all soggy. I added all the ingredients from the two packages into a large bowl and mixed it all up with the salad dressing that is also included.
When your salad is mixed, all you have to do is top your pizza crust.
Slice like you would any other pizza and serve with your favorite main course. I did a really simple pasta dish with ziti, eggplant and tomato sauce.
I just sauteed some cut up eggplant in olive oil and added ready-made tomato sauce. Fast, cheap and easy.
