I’ve been trying so hard to eat better and make serious lifetime changes. Feeling tired and sluggish is not how I want to go through my days. Part of my plan is to cut out a lot of the sugar I’ve been consuming. When I found out how much hidden sugar is in the foods we eat daily, I was overwhelmed. I love to bake and I’ve also been thinking about all the sugar that goes into the recipes I love. TONS of sugar.
I have used Splenda for years, mostly in my coffee and iced tea, but I had never tried baking with it before. Since I was introduced to the wide variety of Splenda products a few weeks ago, I’ve been wanting to find out if baking with it would make a huge difference in taste and consistency.
I went onto the Splenda website and found a recipe that made my mouth water: Lemon Poppyseed Muffins. Yep, that was the one I wanted to try.
The recipe calls for SPLENDA® Granulated, although it actually does use 1/4 cup of regular sugar. But only 1/4 cup – that is drastically less than what most of my recipes usually call for. The Splenda Granulated is pretty cool. The box is so light you would think there is nothing in it. Sugar is so heavy when you pick up a box. The Splenda measures cup for cup just as you would regular sugar and the muffins didn’t have any kind of strange flavor to them.
Lucky for me, I had some help baking muffins last Sunday morning. It’s always good to have someone who is an expert lemon zester.
They were amazing – the perfect amount of sweet and lemony. Each muffin only has 180 calories – that’s more than many of the low-calorie muffins you find in the stores. It IS possible to make #SweetSwaps in your recipes to lower your overall calorie intake and reduce the amount of sugar you consume.
